Coconut Date Energy Balls with Blueberries

    INGREDIENTS

  • 2 dates, pitted [48 g] Medjool Dates

  • 2 tbsp [12 g] Unsweetened Shredded Coconut

  • 1 scoop [20 g] Protein Powder

  • 1 tbsp [6 g] Rolled Oats

  • 1 tbsp [14 g] Chia Seeds

  • 1 dash [0.63 ml] Kosher Salt

  • 1 tbsp [16 g] Almond Butter

  • 0.5 tsp [2.1 g] Vanilla Extract

  • 1 tsp [5 ml] Water (Add more as needed)

  • 0.25 cup [36.25 g] Blueberries


INSTRUCTIONS

  • If dates are dry, soak in warm water for 5 minutes and drain.

  • Add all ingredients except blueberries to a food processor.

  • For a smoother texture, whisk the protein powder with 1–2 tbsp of water (for 1 serving) before adding, or substitute with collagen powder.

  • Pulse until the mixture forms a thick, sticky dough.

  • Add additional water (1 tsp at a time) as needed, until the dough holds together easily.

  • Roll into bite-sized balls and refrigerate for at least 30 minutes.

  • Serve chilled with blueberries on the side.
