Roasted Red Pepper Soup

This roasted red pepper and tomato soup is a perfect winter warmer and very simple to make. You can either purchase ready roasted peppers, or quickly roast some in the oven or air fryer to include. Tomatoes are a great source of antioxidants which have many health benefits.


Serves 2


Ingredients:

290g roasted red peppers

(jar), drained

270g cherry tomatoes, halved

1 garlic clove, crushed

1 vegetable stock cube

1 tsp paprika

1 tbsp olive oil

4 tbsp ground almonds

100ml water


Instructions:

1. Put all ingredients in a blender or food processor.

2. Blitz until smooth, season well and heat until piping hot before serving.
